Casserole Recipe. Pork and orange casserole recipe, preparation time 15 minutes, cooking 16-23 minutes, serves 4 people.


Pork and Orange Casserole

Preparation Time: 15 minutes

Microwave Cooking Time: 16-23 minutes

Serves: 4 people

Ingredients:
15ml/1 tbsp oil
1 medium onion, peeled and finely sliced
450g/llb pork - cut into 1.25cm/ 1/2 inch cubes
280ml/ 1/2 pint/1 cup hot chicken stock
140ml/ 1/4 a pint/ 1/2 cup unsweetened orange juice
5ml/1 tsp oregano - roughly chopped
lOml/2 tsps basil - roughly chopped
1 orange, peeled and sliced
30ml/2 tbsps cornflour/cornstarch
60ml/4 tbsps water

Put the oil and onion into a large casserole and cook on HIGH for 2 minutes to soften. Add the pork and cook on HIGH for 4-6 minutes, until almost cooked. Add the stock, orange juice, herbs and orange slices and stir. Mix the cornflour/ cornstarch with the water and add to the casserole. Cover and cook on MEDIUM for 10-15 minutes, until the meat is completely cooked and the liquid is thickened slightly, stirring occasionally. Serve with rice.
