Chicken Bombay. Chicken bombay recipe, preparation time 25 minutes, cooking time 23 minutes plus standing time, serves 4-6 people. Recipe requires a casserole dish.


Chicken Bombay

Preparation Time: 25 minutes

Microwave Cooking Time: 23 minutes, plus standing time

Serves: 4-6 people

Ingredients:
30m1/ 2 tbsps oil
1 onion, finely chopped
2.5m1/ 1/2 tsp turmeric
5ml/1 tsp ground coriander
5ml/1 tsp ground cumin
1.25m V4 tsp ground nutmeg
l5ml/1 tbsp flour
lkg/ 21/4 Ibs chicken, skinned and boned and cut into 5cm/2 inch pieces
180m1/6 fl oz/ 3/4 cup stock
Juice of a 1/2 lime
1 bay leaf
Salt and pepper
140m1/ 1/4 pint/ 1/2 cup natural yogurt
60g/2oz/ 1/2 cup split almonds
2 hard-boiled eggs, quartered

Heat the oil for 1 minute in a casserole dish. Add the onion, turmeric, coriander, cumin and nutmeg. Cook for 2 minutes on HIGH and stir in the flour. Add the chicken, pour over the stock and lime juice, add the bay leaf and stir well. Cover and cook for 20 minutes on HIGH or until the chicken is tender. Stir frequently during cooking. Stir in the yogurt, almonds and hard-boiled eggs and leave to stand 3-5 minutes before serving. Remove the bay leaf and serve with rice.
