Chicken Madras. Chicken madras, preparation time 25 minutes, 23 minutes plus standing time, serves 4-6 people. Ingredients for a rich sauce to complement the meal are included.


Chicken Madras

Preparation Time: 25 minutes

Microwave Cooking Time: 23 minutes plus standing time

Serves: 4-6 people

Ingredients:
45m1/3 tbsps oil 1 onion, chopped
2 cloves garlic, crushed
5ml/1 tsp chili powder
2.5ml/ 1/2tsp ground coriander
2.5ml/ 1/2tsp ground cumin
1.25m/ 1/4a tsp turmeric
1.25m1/ 1/4 tsp fenugreek seeds, crushed
15m1/1 tbsp flour
1-2 chilies, finely chopped
lkg/2 1/2 lbs chicken, skinned, boned and cut into 5cm/2 inch pieces
1 bay leaf
2 curry leaves
4 tomatoes, skinned, seeded and roughly chopped
Salt
15m1/1 tbsp desiccated coconut
280m1/ 1/2 pint/1 cup stock

Heat the oil for 1 minute on HIGH in a large bowl or casserole. Add the onion, garlic and spices and cook for 2 minutes on HIGH. Stir in the flour and add the chilies and chicken. Add the bay leaf, curry leaves, tomatoes, salt and coconut and gradually pour on the stock. Stir to mix well and cover the dish. Cook on HIGH for 20 minutes or until the chicken is tender. Stir several times during cooking and leave to stand 3-5 minutes before serving. Remove the bay leaf and serve with rice.
