Dahl. Dahl recipe, prepartion 25 minutes, cooking time 45 minutes plus 5-10 minutes standing time, serves 4 people.

Preparation Time: 25 minutes

Microwave Cooking Time: 45 minutes plus 5-10 minutes standing time

Serves: 4 people

Ingredients:
225g/5oz red lentils
60g/2oz/4 tbsps butter or margarine
1 large onion, finely chopped
1 clove garlic, crushed
5ml/1 tsp cumin
5ml/1 tsp coriander
5ml/1 tsp turmeric
2.5ml/ 1/2 tsp cinnamon
2.5ml/ 1/2 tsp nutmeg
675ml/1 1/2 pints/3 cups vegetable stock
Salt and pepper
1 bay leaf
5 tomatoes, peeled and seeded
15ml/1 tbsp tomato puree
Chopped coriander leaves
1 green chili pepper, finely shredded

Cover the lentils with water and soak overnight. Alternatively, microwave 10 minutes to boil the water and then allow the lentils to boil for 2 minutes. Leave to stand, covered, for 1 hour. Melt the butter or margarine for 1 minute on HIGH in a large casserole. Add the onion, garlic, and spices. Cook 4 minutes on MEDIUM. Drain the lentils and add to the casserole with the vegetable stock. Cover and cook on HIGH for 45 minutes, or until the lentils are soft and tender. Add tomatoes and puree/paste. Allow to stand, covered, 5-10 minutes before serving. Puree before serving and add the chopped coriander. Sprinkle the shredded chili on top before serving.
