Leeks. Saffron leeks recipe, preparation time 20 minutes plus chilling time, cooking time 10 minutes, serves 6 people.


Saffron Leeks

Preparation Time: 20 minutes plus chilling time

Microwave Cooking Time: 10 minutes

Serves: 6 people

Ingredients:
6 medium-sized leeks
3 cloves garlic, crushed
Grated nutmeg
Grated rind and juice of 1 lemon
1 small piece stick cinnamon
1 bay leaf
1.25m1/ 1/4 tsp saffron
Cayenne pepper
60ml/4 tbsps vegetable oil
Salt

Trim the tops of the leeks neatly and cut them lengthwise almost in half. Rinse thoroughly and leave to drain. Place in a large, shallow dish with the garlic, nutmeg, lemon juice and rind, cinnamon, bay leaf and a pinch of cayenne pepper. Cover tightly and cook on HIGH for about 8 minutes. Drain the leeks, reserving the liquid and set the leeks aside to cool. Infuse the remaining liquid with the saffron for 2 minutes on HIGH. Combine the liquid with the oil and add salt to taste. Lightly prick the leeks with a fork and place them in a shallow serving dish. Pour over the cooking liquid and oil mixture and chill 2-4 hours before serving.
