Oysters a la Creme

Preparation Time: 15 minutes

Microwave Cooking Time: 5 minutes

Serves: 4 people

Ingredients:
2 dozen oysters on the half shell or unopened
60m1/4 tbsps double/heavy cream
60m1/4 tbsps cream cheese
15m1/1 tbsp chopped parsley
Salt and pepper Nutmeg

Garnish
Coriander leaves

Scrub the oyster shells well, if unopened, and leave to soak in clean water for 2 hours. Arrange in a circle on the microwave turntable and cook on HIGH for 45 seconds-2 minutes. After 45 seconds insert a shortbladed knife near the hinge and prise open. If the oysters do not open easily, they need further cooking for up to 2 minutes. Remove any pieces of broken shell from the inside and place oysters in a circle on the turntable. Mix together the double/ heavy cream, cream cheese, parsley and salt and pepper. Top each oyster with some of the cheese mixture. Sprinkle with nutmeg and heat through 2-3 minutes on MEDIUM. Garnish with coriander and serve immediately.
