Trout Recipe. Trout with lovage and yogurt sauce, preparation time 10 minutes, cooking time 12-18 minutes, serves 4 people.


Trout with Lovage and Yogurt Sauce

Preparation Time: 10 minutes

Microwave Cooking Time: 12-18 minutes

Serves: 4 people

Ingredients:
15m1/ 1/2 oz/1 tbsp butter
60g/2oz/ 1/2 cup flaked/slivered almonds
5ml/1 tsp celery seeds
30ml/2 tbsps chopped lovage
4 medium trout, cleaned
Salt
Freshly ground black pepper
15ml/1 tbsp cornflour/cornstarch
140m1/ 1/4 a pint/ 1/2 cup natural yogurt

Put the butter, almonds and celery seeds into a shallow dish and cook, uncovered, on HIGH for 4-8 minutes, stirring frequently, until the almonds begin to brown. Set aside. Divide about half the chopped lovage between the four trout, place inside each fish and season with salt and pepper. Arrange the fish head to tail in a shallow dish and cook on HIGH for 6-8 minutes until the fish is cooked, repositioning halfway through cooking. Set aside and keep warm. Mix the cornflour/cornstarch with a little of the yogurt in a small bowl and then add the remaining yogurt. Cook on HIGH for 2-4 minutes, whisking frequently until thickened. Stir in remaining lovage. Serve the trout with the sauce and garnish with the browned almonds.
